Ingredients:

  • 4 large potatoes (Russet or Idaho are best)
  • Vegetable oil for frying (about 4-6 cups depending on your pot size)
  • Salt to taste
  • Optional: seasoning (like paprika, garlic powder, or pepper)

Instructions:

  1. Prepare the Potatoes:

    • Wash and peel the potatoes.
    • Cut the potatoes into even-sized sticks, about 1/4 inch thick.
    • Soak the potato sticks in cold water for at least 30 minutes. This helps remove excess starch and makes the fries crispier.
    • Drain the water and pat the potatoes dry with a clean towel.
  2. Heat the Oil:

    • Pour vegetable oil into a deep pot or a deep fryer, filling it about halfway.
    • Heat the oil to 325°F (165°C). Use a thermometer to check the temperature.
  3. First Fry (Blanching):

    • Fry the potato sticks in batches for about 3-4 minutes. They should be soft but not browned.
    • Remove the fries from the oil and let them drain on paper towels. Let them cool completely.
  4. Second Fry (Crisping):

    • Increase the oil temperature to 375°F (190°C).
    • Fry the potatoes again, in batches, until golden brown and crispy, about 2-3 minutes.
    • Remove from the oil and drain on paper towels.
  5. Season and Serve:

    • Immediately sprinkle the fries with salt and any other desired seasonings.
    • Serve hot with your favorite dipping sauce.
