simple recipe for making crispy fried fries at home
Ingredients:
- 4 large potatoes (Russet or Idaho are best)
- Vegetable oil for frying (about 4-6 cups depending on your pot size)
- Salt to taste
- Optional: seasoning (like paprika, garlic powder, or pepper)
Instructions:
Prepare the Potatoes:
- Wash and peel the potatoes.
- Cut the potatoes into even-sized sticks, about 1/4 inch thick.
- Soak the potato sticks in cold water for at least 30 minutes. This helps remove excess starch and makes the fries crispier.
- Drain the water and pat the potatoes dry with a clean towel.
Heat the Oil:
- Pour vegetable oil into a deep pot or a deep fryer, filling it about halfway.
- Heat the oil to 325°F (165°C). Use a thermometer to check the temperature.
First Fry (Blanching):
- Fry the potato sticks in batches for about 3-4 minutes. They should be soft but not browned.
- Remove the fries from the oil and let them drain on paper towels. Let them cool completely.
Second Fry (Crisping):
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again, in batches, until golden brown and crispy, about 2-3 minutes.
- Remove from the oil and drain on paper towels.
Season and Serve:
- Immediately sprinkle the fries with salt and any other desired seasonings.
- Serve hot with your favorite dipping sauce.
